Pastry Course Day 26: Pulled sugar

Day 26 was the first day of the sixth module. In this module we’re not baking stuff, but focusing more on techniques. This day we started working with sugar.

Pulling sugar is a really fun, but also extremely hot job. The sugar has to stay warm so you’re working under a hot red lamp. The lamp ensures that the sugar stays warm. You shouldn’t touch hot sugar with your hands so you’re wearing gloves. However, even with the gloves on you can still feel the heat of the sugar.

It was really fun to do, by pulling and kneading the sugar you will get the desired shape. The assignment really was to make a rose, but since my first petals turned out a bit too long I decide to make an orchid instead.

Next to pulling the sugar we also tried blowing the sugar, this was really fun to do as well. For my piece I blew some sort of a vase to which I stuck my flower to. It was a really fun day during which I learned a lot.
