Pastry Course Day Twenty-one: 3D decorative sponge cake and fruit bavarois

The 21st day of the course was also the first day of the fourth module. The fourth module is all about basic pastry techniques. I do think I kind of like these type of modules the best. I love to experiment with flavours etc.!

On this day we learned how to create a decorative sponge cake using a 3D mat. Decorative sponge cake is a thin light piece of cake that you can, for example, place at the side of a nice bavarois. Using a special mat you can give your sponge a 3D effect. It was really fun to do. As always, it may seem a piece of cake (no pun intended), but you always end up working on it for a lot longer than you initially anticipated!

The bavarois (aka Bavarian cream) we made was a nice fruit bavarois, good basic recipe for me to develop even further and create my own recipe from (which, I of course will share on the site!).

I was really happy with the endresult and the flavour was pretty good as well!
