These Cinnamon and Sugar Muffins really taste like donuts. An easy recipe, I love making them as mini cinnamon and sugar muffins.

Ingredients
Muffins
- 1 3/4cup all-purpose flour300 g
- 1 1/2tsp baking powder
- 1/2tsp salt
- 1/2tsp nutmeg
- 1/2tsp cinnamon
- 1/2tsp vanilla extract
- 1/3cup oil80 ml
- 3/4cup sugar165 g
- 1 egg
- 3/4cup milk185 ml
Instructions
- Lightly grease a muffin tin and dust with flour.
- In a bowl, mix flour, baking powder, salt, nutmeg and cinnamon until combined.
- In a separate bowl, mix together oil, sugar, egg, vanilla extract and milk.
- Add dry ingredients to the wet ingredients and fold the ingredients together, but be careful not to over-work the mixture, stir only to combine. It doesn’t matter if there are a few lumps in there.
- Bake in the centre of the oven at 350°F/175°C for 15-20 minutes, or until the muffins are well risen and a skewer inserted in the centre comes out clean..
- Meanwhile, melt the butter in a bowl. Combine the sugar with the cinnamon in another bowl.
- Shake muffins out while still hot. Dip muffins in butter, coating thoroughly, then into the sugar/cinnamon mix. Let cool.
