Cut the vanilla bean lengthwise in half and scrape out the seeds. If needed (depending on the size of your jar) cut the vanilla bean into three parts.
Add half the sugar into a jar and mix in the vanilla seeds.
Add the vanilla beans into the jar and top with the remaining half of the sugar.
Let the sugar sit for 2-3 weeks so the vanilla can infuse the sugar. Stir it every once in awhile to mix the seeds into the sugar. After 2 weeks the vanilla sugar is ready to use.
Recipe Notes
The vanilla sugar will turn a light brown color over time.
If you have used a vanilla bean for a recipe, instead of throwing it away, you can add it to the sugar (make sure the beans are dried). You can never add too many vanilla beans to the sugar.
Make sure you keep the sugar in a jar with a lid that closes tightly.
