Super Lemon and Lime Cupcakes
I made these lemon and lime cupcakes together with some chocolate and chili cupcakes to take to a barbecue with some of my former neighbours. These lemon and lime cupcakes went down pretty fast! Everybody thought they were super.
Okay, maybe not everbody… my little nephews mistook the lemon cupcakes for vanilla cupcakes. So when they took a bite and it wasn’t vanilla they immediately didn’t like them anymore… I’ll just give them a little time to develop their taste buds some more and I’m sure they’ll love them as much as everybody else did!
The first thing you’ll need to do is prepare a muffin tin or a baking tray with 15-20 paper cups.
Next, it’s time to grab your ingredients, butter, flour, vanilla extract, buttermilk, sugar, eggs, lemon zest and lime buttercream (not in the photo, sorry!).
Put the butter into a bowl.
Add sugar.
And the lemon zest.
On top of that add the vanilla extract and start mixing it all together with an electric mixture till it’s nice and creamy.
While the butter mixture is in the mixer lightly whisk the eggs.
Add the buttermilk to the eggs.
And lightly whisk it together.
I like to pour mine into a little jug so I can easily pour it in with the butter mixture later.
Now it’s time to check on your butter mixture. It should look all fluffy and creamy like this.
Yep, like this, if you could smell the photo’s you’d understand why I put in a second photo of the creamy mixture. Doesn’t it just look delicous already?
Okay, I’ll stop drooling and get on with the recipe (I hear ya!)
Now it’s time to add half of the egg mixture with the butter mixture and mix till the egg is incorporated.
Next, add half of the flour to the butter mixture and mix until the flour is incorporated.
Now add the rest of the egg mixture and mix until incorporated.
And the rest of the flour and mix until the flour is incorporated. That’s it, your batter is done!
Now fill the paper cups by 2/3 with the batter. I usually use an ice cream scoop for this.
Fill up all your paper cups and bake in the oven for about 25-30 minutes.
When you can insert a skewer into the cupcakes and it comes out clean your cupcakes are done and ready to get out of the oven.
Take them out of the muffin tin and put on a wire rack to cool.
When the cupcakes are cooled down it’s time to take your Lime Buttercream and put it into a piping bag.
Pipe as much or as little of the Awesome Lime Buttercream on as you want in any design you want.
I sprinkled a few yellow and green sprinkles on top to add a little finishing touch.
These cupcakes really were super and are extra delicious on a hot day when you want something sweet with a nice hint of lemon and lime freshness.

- 3 eggs
- 250 g butter soft
- 160 g caster sugar fine sugar
- 1 teaspoon vanilla extract
- 50 ml buttermilk
- 200 g self-raising flour sifted
- 2 lemons zest of 2 lemons
- 1 portion lime buttercream Awesome Lime Buttercream

- Preheat oven to 175°C/350°F. Prepare a muffin tin or a baking tray with 15-20 paper cups.
- Mix butter, sugar, vanilla and lemon rind in a mixer on medium speed.
- In a bowl, whisk eggs and add buttermilk.
- When the butter mixture is creamy, add half the egg mixture to it. When the egg mixture is incorporated into the butter mixture add half the flour. Once the flour is incorporated into the batter add the other half of the egg mixture and the other half of the flour in the same way. Mix for another half minute and fill the paper cups by 2/3 with the batter.
- Bake the cupcakes in the centre of the oven for about 25-30 minutes until they firm up. The cupcakes are ready when a skewer inserted in the centre comes out clean. Let them cool for a while and put them on a wire rack.
- Top cupcakes with Lime Buttercream.
